Once cooked, place on a plate with paper towels to absorb the extra oil from sausage. To assemble the hotdog, spread each half of bun with desired amount of mayonnaise, add sausage, top with desired amount of pickled vegetables, cilantro and Thai basil. Drizzle the corn with olive oil and season with salt and pepper. Grill the corn, turning it every few minutes until each side is a light gold color, about six to eight minutes. Let the corn cool and then cut the kernels off of the cob. In a medium bowl, add cut corn, red pepper, mint, feta cheese and season with salt & pepper. To serve the gazpacho, ladle the chilled soup into bowls and garnish with the corn relish. Enjoy this refreshing soup for a light lunch on a warm day. [6/26/24 Coupon Book] Makes 4 servings – Total Time: 45 minutes Pair With: Lillie’s Pinot Grigio Wine ______________________________________________ 🍽️ GET COOKIN': ½ cup daikon, julienne ½ cup carrots, julienne ½ cup zucchini, julienne ½ cup sweet onion, julienne 1 cup water 1 cup sugar 1 cup apple cider vinegar ½ tbsp. salt 8 skewers, 6 to 8 inches long, soak in water for 10 minutes 1 pack 16 oz. Frank’s Foods Portuguese Sausage hotdogs 1 pack 8 hot dog buns Sriracha mayo or mayo ½ cup cilantro leaves, for garnish ½ cup Thai basil leaves, for garnish In a heat proof bowl, place the daikon, carrots, zucchini and onion. [6/26/24 Coupon Book] Makes 6 to 8 servings – Total Time: 90 minutes Pair With: Sterling Vintner’s Collection Chardonnay ______________________________________________ 🍽️ GET COOKIN': 1 medium size seedless Thai watermelon, cored and cubed 1 pack (10 oz.) grape tomatoes, wash, remove stems 1 English cucumber, peeled and cut into small cubes salt, to taste pepper, to taste 5 pieces of corn on the cob, remove husks, silk 1 tbsp. olive oil 1 medium size red bell pepper, small dice 8 mint leaves, chiffonade ½ cup Feta cheese Place the watermelon into a blender with the grape tomatoes and cucumber, blend until smooth. Pour the mixture into a large bowl, salt & pepper to taste and mix together well. Refrigerate for at least one hour before serving. While the gazpacho is cooling, preheat grill to medium high heat. Then cut each leaf in half down the longest length. - Trim half of the cut leaves at an angle horizontally to make smaller filler leaves. - Hold the ends of two long pieces together with a clothespin & weight or have a friend hold the other end. - Twist both leaves to the right. Next, pass the right stand over the left. Repeat until you’ve twisted a couple inches in length. - Add a filler to the lei. Pinch a shorter leaf in the middle and place between the rope. 💌 Send a card to a friend day is this Friday (Feb. 7th), get bakin' and send a friend a GUAVA LOVE NOTE! GET BAKIN': 💌 flour 💌 pie crust 💌 guava jam 💌 egg wash Unroll pie crust and trim into 4 squares. Rotate the squares into a diamond shape. Use leftover pie crust to cut out 4 small hearts with a heart-shaped cookie cutter or kitchen scissors. Set aside. Dollop about a tbsp of jam in the middle of the pie crust square. Fold left and right corner inwards. Dip your finger with water and wet the edges of the bottom flap and fold upwards. Wet one side of the pastry hearts and arrange them wet side down onto the folded edges of the pastry envelopes. Brush with egg wash and add sprinkles/sugar if desired. Bake at 400°F for 10 to 12 minutes, or until golden brown. PRO TIP: Place a piece of aluminum foil over the top flaps of the envelopes if they begin to brown before the rest of the envelope. Enjoy!

Repeat until the filling is used up. Pan fry the wraps in a large pan with a shallow sheen of cooking oil, flipping until both sides are crispy and browned. Check out this Quick and ‘Ono Sheet Pan Salmon and Veggies Recipe by Chef Michi Holland that you can cook in just 40 minutes! 🐟🍋 LET’S GET COOKIN’: 🐟 cooking spray 🐟 1 lb. kabocha squash (washed) 🐟 2 tbsp extra virgin olive oil (divided) 🐟 1 tsp paprika 🐟 1 tbsp garlic salt (divided) 🐟 black pepper 🐟 3 lbs. salmon fillets or steaks 🐟 1 tsp dried dill 🐟 1 lemon (zested then thinly sliced) 🐟 1 lb. asparagus fresh dill (garnish) Preheat oven to 425°F. Cover a rimmed baking sheet with parchment or foil and generously coat with cooking spray. Cut the kabocha squash in half and discard the seeds; then cut each half into 1/2" slices. In a large bowl, toss the kabocha in 1 tbsp. olive oil then sprinkle with 1 tsp. garlic salt and pepper to taste, and place on one side of the prepared sheet pan. Bake the kabocha for 15 minutes. Chef Ryan's version of a great summer dessert, the strawberry sundae. ______________________________________________ GET COOKIN’: 2 lb strawberries (tops removed) 2 tsp orange zest 1 cup fresh squeezed orange juice 1/3 cup granulated sugar 1/4 tsp cinnamon 1/4 tsp salt 1/3 cup orange liqueur 3 Tbsp honey 3 Tbsp corn starch 2 qt vanilla ice cream Preheat oven to 350° F. Wash and remove the tops and stems from the strawberries. Place strawberries, cut side down into a 13" x 9" baking pan. In a medium sized bowl, add orange zest, orange juice, sugar, cinnamon, salt, orange liqueur, honey, and corn starch. Mix well until the corn starch is dissolved into the liquid. Pour orange liquid over strawberries and place in oven and bake for 20 minutes. Then remove the pan from the oven and stir the strawberries to make sure the corn starch has thickened the sauce evenly. Place back into the oven and cook for another 15 to 20 minutes until the strawberries are soft and the sauce has thickened. Take the pan out of the oven and let reduce in temperature until the strawberries are warm. Place desired amount of strawberries and sauce into a bowl and top with vanilla ice cream. Enjoy this sweet treat for your next party. The smashed potato trend, but BITE SIZED! These make the ultimate pupu for dad this coming Father's Day. SMASHED POTATO BITES 🥔 2 lbs. potatoes (we used potato bites, but you can use yukon or salad potatoes) 🥔 Mountain Apple Brand Wow! Seasoning or salt, to taste 🥔 4 tbsp. olive oil, divided 🥔 garlic powder, to taste 🥔 dried herbs, to taste Wash potatoes thoroughly. Place in a large pot filled with water, at least an inch above the potatoes. Season water with salt and boil for about 20 minutes until potatoes are tender and easily pierced through by a fork. Drain and let cool until potatoes are safe to handle. Prep a foil lined baking sheet with 2 tbsp. olive oil. Spread evenly across the pan. Add potatoes to the pan and smash into round discs. The thinner the potatoes, the crispier they will be. Season with Wow! seasonings, garlic powder and dried herbs. Coat the top with a thin layer of olive oil (about 2 tbsp.) and bake in the oven at 425℉ for 20 to 60 minutes until desired crispiness is reached. Add your favorite toppings or enjoy with your favorite dip!

This Italian condiment for fish and meat really brings out the natural flavors of the steak. Serves 4 – Total Time: 1 hour Pair With: Cabernet, Zinfandel or Merlot Wine ______________________________________________ GET COOKIN’: 1 tsp smoked paprika 1 tsp garlic powder ½ tsp ground pepper 1 tsp ground cumin ½ tsp chili powder salt 4 rib eye steaks 1 cup Italian parsley (finely chopped) 1 cup cilantro (finely chopped) 2 Tbsp olive oil 3 Tbsp prepared horseradish 3 large radishes (finely chopped) 1 lemon (zested) ¼ tsp black pepper To create the rub, place the paprika, garlic, ground pepper, cumin, chili powder, and 2 teaspoons salt into a small bowl and mix well. Generously rub each side of the steaks with spice rub, cover and refrigerate for 30 minutes.
