The smashed potato trend, but BITE SIZED! These make the ultimate pupu for dad this coming Father's Day.
SMASHED POTATO BITES
🥔 2 lbs. potatoes (we used potato bites, but you can use yukon or salad potatoes)
🥔 Mountain Apple Brand Wow! Seasoning or salt, to taste
🥔 4 tbsp. olive oil, divided
🥔 garlic powder, to taste
🥔 dried herbs, to taste
Wash potatoes thoroughly. Place in a large pot filled with water, at least an inch above the potatoes. Season water with salt and boil for about 20 minutes until potatoes are tender and easily pierced through by a fork. Drain and let cool until potatoes are safe to handle.
Prep a foil lined baking sheet with 2 tbsp. olive oil. Spread evenly across the pan.
Add potatoes to the pan and smash into round discs. The thinner the potatoes, the crispier they will be.
Season with Wow! seasonings, garlic powder and dried herbs. Coat the top with a thin layer of olive oil (about 2 tbsp.) and bake in the oven at 425℉ for 20 to 60 minutes until desired crispiness is reached.
Add your favorite toppings or enjoy with your favorite dip!
