Zucchini Fritters - Vegan recipe
Hello, today we're gonna take a look at a fried zucchini recipe that's really quick and easy to do.
And for those who don't really like zucchinis, it's a really great and tasty way to eat them.
You can barely feel its taste or texture.
Ingredients Zucchini Fritters :
- 3 zucchinis
- 300 g of flour
- 70 g of cornstarch
- 90 ml of water
- 300 ml of soy milk
- 5.5 g of baking powder
- 30 ml of olive oil
- 30 g of vegan cheese (i used grated vegan prosociano)
- Salt and pepper
- Oil to fry them (i used olive oil)
Instructions Zucchini Fritters :
- Wash and peel the zucchinis
- Grate them
- Strain them if needed (these veggies tend to retain water)
- In a big bowl, add your flour, cornstarch, water, soy milk, cheese, olive oil, salt, pepper and baking powder
- Add your grated zucchini
- Mix it together
- Pour a good amount of oil into a pan
- Pour a ladle's worth of batter in
- Do this until you get a panful
- Cook every donut until golden brown on each side
- Once they're cooked throughout, drop them on a kitchen towel and do this again until the batter runs out
Feel free to add more oil to your pan every once in a while.

You can even do this recipe with other vegetables instead of the zucchini.
