Vegan Crepe Cake - Vegan Recipe
Hello, today we're going to make a fantastic vegan crepe cake.
To begin with, make your vegan crepes ! Make sure to double the ingredients to have enough.

Ingredients (on top of the crepes') you'll need :
*For the custard :
- 100 g of flour
- 1 packet of vanilla sugar
- 1 tbsp of cornstarch
- 3 tbsp of water
- 1 vanilla bean
- 1 tsp of vanilla extract (or hazelnut extract)
- 200 g of sugar
- 1 liter of soy milk

*For the ganache
- 200 g of vegan dark chocolate
- 150 g of liquid soy cream
- 50 g of soy milk
- 1 tbsp of vegan butter/margarine

Instructions :
- Once your crepes are cooked, stack them on top of each other

*For the custard :
- In a pot, pour your milk as well as your vanilla bean and its inside which you scrapped, your vanilla or hazelnut extract, your vanilla sugar and let it simmer until the liquid reaches its boiling point
- Turn off the heat before removing the vanilla bean and adding your flour and sugar
- Stir well before blending it up
- In a small bowl, mix your cornstarch and water together before pouring it in your pot
- Cook it again while continuously stirring so your custard doesn't stick to your pot
- Once it's thickened, you can eventually turn off the heat
Your vegan custard is ready.

- Put one crepe on a plate then proceed to pour 1 to 2 tbsp of custard on top
- Add another crepe and repeat another 1 to 2 tbsp of custard on top
- Do this again and again until you run out of crepes
You might end up with a little extra custard, that's okay.

*For the ganache :
- Add your vegan chocolate and vegan butter in a pot
- Stir it well on low heat until melted
- Pour your soy milk then mix it together
- Add your liquid soy cream and stir again
- Once it's smooth, turn off the heat

How to make the vegan crepes cake :
- If you do not have any rack you can use, take any wide dish you have, put a glass in the middle then a plate on top
- Put your crepe moutain on top
- Take a laddle and carefully pour your ganache on top, making little circles to drop the chocolate little by little on the sides of your cake
You can use a spoon or even a spatula to try and get an even layer of chocolate everywhere
- Put the crepe cake in the fridge for a few hours until it hardens completely
- Take it off the rack or plate and place it on a new one for a cleaner look

It's ready !
Note that this cake goes really well with a good vegan ice cream.
