Oh, and also Kiefer Sutherland, son of legendary actor Donald Sutherland and a highly regarded artist in his own right, having starred in the likes of The Lost Boys, Young Guns, Flatliners and a full 9 days of espionage action in 24. Kiefer is also an accomplished musician, releasing his first album ‘Down In A Hole’ in 2016 – under the Ironwork record label which he also co-founded. In a fortunate nod to future projects, the first single from the album was titled ‘Not Enough Whiskey’. Reckless & Me followed in 2019 with a third album Bloor Street arriving in early 2022 – and he continues to tour worldwide in between acting roles. The move into a whisky brand was a natural fit, and the four worked with Canadian master blender Michel Marcil - highly regarded in creating mainly flavoured whiskies – to launch a spirit that evoked the coastal region of Red Bank itself. India is the biggest consumer of whisky in the world, but the vast majority of ‘whisky’ made in India is actually produced with molasses, making it essentially a rum and meaning it can’t be sold outside of Asia as whisky. However, Indri is the fourth Indian brand to release Single Malt whisky in Europe following Amrut, Rampur and Paul John – as with the latter, Indri uses indigenous 6-row barley which has been grown for hundreds of years in Rajasthan – it produces a smaller yield but arguably more depth of flavour. 90% of their output is unpeated, with one peated run taking place every three months. Production of Single Malt whisky at Indri first started in 2012 and was eventually overseen by Surrinder Kumar, who is considered by many to be the forefather of Indian Single Malt whisky after serving as Master Distiller and Blender at Amrut from 2006 to 2014. Graeme Bowie, who previously worked with Angus Dundee and was the first distillery manager for Ardnamurchan, joined in 2020 to be involved with the final blending of the initial release and now runs the distillery operations. The word ‘Indri’ is also a derivation of the Sanskrit word Indris, which denotes the five senses. ‘Dru’ means wood, a tree or a vessel made of wood. In ancient Indian mythology, Dru was a vessel in which a ritual drink called ‘soma’ was collected and offered to the Gods. Indeed, the Celtic word ‘Druid’ stems from the Sanskrit and translates to ‘Immersed In The Oak Tree’. The first release from Indri – named Trini after the Sanskirt for ‘three’ – was a combination of spirit matured in ex-Bourbon casks along with barrels which had previously held either Pedro Ximenez Sherry or French red wines and bottled at 46% ABV. Indri Dru on the other hand, uses spirit matured solely in selected ex-Bourbon casks and bottled at cask strength. No age statement is given, and it has an ABV of 57.2%. Follow The Spirit Specialist on social media: Facebook: https://www.facebook.com/specialistspirit Twitter: @spiritspec Instagram: @thespiritspecialist The Spirit of Yorkshire Distillery was founded in 2016 by Tom Mellor and David Thompson – Tom was an arable farmer who set up the Wold Top Brewery in 2013 and already had ideas about opening a whisky distillery in conjunction, and so partnered with long-standing friend and marketing expert David to set up the new spirit venture. The barley used for both beer and whisky is grown on Tom’s own fields, with milling, mashing and fermentation taking place at the brewery 4 and a half miles away from the distillery itself – if the distillery was in Scotland, this would not be allowed due to Scotch Whisky Association regulations. In planning the distillery, Tom and David enlisted the help of legendary distillery consultant Jim Swan, who was well known around the world for assisting new distilleries such as Kavalan, Kilchoman, Penderyn and Lindores Abbey, before his untimely death in 2017. The house style will ultimately be akin to the likes of Glenlivet – fruit forward but somewhat delicate in body. The Master Distiller is a young man named Joe Clark. Joe’s first job in the whisky industry was as a part-timer in the York branch of The Whisky Shop – at that time managed by none other than yours truly. His passion and enthusiasm was obvious from the very start, and he has worked tirelessly to ensure the early spirit releases from the distillery – under the brand name of ‘Filey Bay’ – are of the highest quality. In addition to two copper pot stills, a directional arm can connect to a four plate column still, which enables them to play around with reflux and redistillation. Maturation takes place principally in first-fill ex-Bourbon casks from Old Forester, although plenty of experimentation has been done with other cask types and finishing. Indeed, the current core range features a finish using Moscatel Wine casks and an STR ex-Rioja cask finish – STR (or shaved, toasted and recharred) is a signature of Jim Swan’s legacy. Filey Bay Flagship, however, can be seen as the key introduction to the Filey Bay flavour profile, with light, fruity and creamy notes throughout. Unlike other recent new whisky distilleries across the UK, Spirit of Yorkshire never had any intention to delve into the massive gin or growing rum market, which would have giving them an early and potentially lucrative revenue stream. The only concession they have made was the release of a Whisky and Malt Spirit Cream Liqueur at the end of 2020, allowing visitors to their distillery who didn’t drink whisky the chance to still appreciate their output. Just like the IPA Finish release, Filey Bay Porter Cask has a somewhat convoluted process to get to bottle that exemplifies the close connection between the distillery and its sister brewery. Barrels of Filey Bay whiskies from both ex-Bourbon and ex-Pedro Ximenez Sherry (that would be bottled Sherry Cask Reserve #2) were filled with Wold Top Marmalade Porter, which then rested for 14 months to add an additional influence to the wood. Entering the cask at 5%, the Porter was disgorged from those barrels at a higher ABV of 8.5% to be bottled under the name Rip Curl. It was founded in 2019 but was the result of a previous 8 years of separate research and development by three separate families – the Hamiltons, Arundels and Mordues - to create a new spirit brand. Combining skills and experience, the team first launched a vodka made with King Edward potatoes grown at the Hamilton family farm. It was branded Edwards 1902, named after the year of both King Edward 7th coronation and when the King Edward potato – named in his honour - was first grown in Louth, just 30 miles away from the distillery location. Known for their creamy texture, the potatoes produced a rich, thick mouthfeel for the vodka, which was then used as the base of a Yorkshire Rhubarb vodka and coffee and elderflower liqueurs. But there was also the desire to produce a single malt whisky, so Laureate barley was sourced from Yorkshire and distilled in Bertie, the still named after King Edward 7ths nickname. Maturation took place initially in small ex-Bourbon casks before a period of finishing in barrels that previously held Pedro Ximenez Sherry. The Flarepath is the name of the industrial estate where the distillery sits and is so named as it was previously part of an RAF airbase that was operational during World Wars 1 and 2. As a result the first whisky release from Elsham Wold pays homage to the role of the Lancaster aircraft during World War 2 and the airmen who flew in them. Bakewell, an Anglo-American musicologist, cares deeply about the island and the venture aims to not only provide long term employment opportunities but also provide a focal point for the local population to rally around – it has often been dubbed a ‘social distillery’ with spirit made for the community, by the community. Simon Erlanger, who had previously worked with Diageo and Glenmorangie, was brought on board as Managing Director to lead the operation. ‘Hearach’ translates from Scottish Gaelic as ‘a Harris islander’ and is the first Single Malt whisky release from the distillery. 100% Scottish barley is used and 8 batches have been released in quantities of around 13,000 bottles each, with the marriage of casks being overseen by chief blender and Hearach Shona MacLeod, who herself is mentored by Dr Gordon Steele, well-known within the industry for his expertise on flavour profiling. The whisky is a minimum of 4 years old and maturation takes place in a combination of first-fill ex-Bourbon casks sourced from Buffalo Trace and Heaven Hill alongside ex-Oloroso and ex-Fino Sherry barrels. A small amount of peated barley is also used to introduce a slightly smoky element, with a phenol level of around 12 to 15 PPM. Isle of Harris The Hearach has no colour added and no chill-filtration takes place, and it is bottled at 46% ABV. Ex-Bourbon barrels that had previously held Filey Bay Flagship Single Malt whisky were then filled with Wold Top’s Scarborough Fair IPA beer, to rest in cask for around 9 months. To the teams initial surprise, the beer went into cask at an ABV of 5.1% but came out at a higher strength of 9.6% - you can find these higher strength beers bottled as Barrel Wave IPA. On the very same day the beer was disgorged from the casks, whisky aged around five to five-and-a-half years old in the case of this 2nd batch - that otherwise would have become Flagship Single Malt – was refilled into them and left for around 6 months to marry the influence of the ale in the wood. As with Batch #1, there is no designated number of bottles in the release, and it is bottled at 46% ABV. Oh, and also Kiefer Sutherland, son of legendary actor Donald Sutherland and a highly regarded artist in his own right, having starred in the likes of The Lost Boys, Young Guns, Flatliners and a full 9 days of espionage action in 24. Kiefer is also an accomplished musician, releasing his first album ‘Down In A Hole’ in 2016 – under the Ironwork record label which he also co-founded. In a fortunate nod to future projects, the first single from the album was titled ‘Not Enough Whiskey’. Reckless & Me followed in 2019 with a third album Bloor Street arriving in early 2022 – and he continues to tour worldwide in between acting roles. India is the biggest consumer of whisky in the world, but the vast majority of ‘whisky’ made in India is actually produced with molasses, making it essentially a rum and meaning it can’t be sold outside of Asia as whisky. However, Indri is the fourth Indian brand to release Single Malt whisky in Europe following Amrut, Rampur and Paul John – as with the latter, Indri uses indigenous 6-row barley which has been grown for hundreds of years in Rajasthan – it produces a smaller yield but arguably more depth of flavour. 90% of their output is unpeated, with one peated run taking place every three months. Production of Single Malt whisky at Indri first started in 2012 and was eventually overseen by Surrinder Kumar, who is considered by many to be the forefather of Indian Single Malt whisky after serving as Master Distiller and Blender at Amrut from 2006 to 2014. Graeme Bowie, who previously worked with Angus Dundee and was the first distillery manager for Ardnamurchan, joined in 2020 to be involved with the final blending of the initial release and now runs the distillery operations. The word ‘Indri’ is also a derivation of the Sanskrit word Indris, which denotes the five senses. ‘Dru’ means wood, a tree or a vessel made of wood. In ancient Indian mythology, Dru was a vessel in which a ritual drink called ‘soma’ was collected and offered to the Gods. Indeed, the Celtic word ‘Druid’ stems from the Sanskrit and translates to ‘Immersed In The Oak Tree’. The first release from Indri – named Trini after the Sanskirt for ‘three’ – was a combination of spirit matured in ex-Bourbon casks along with barrels which had previously held either Pedro Ximenez Sherry or French red wines and bottled at 46% ABV. Indri Dru on the other hand, uses spirit matured solely in selected ex-Bourbon casks and bottled at cask strength. No age statement is given, and it has an ABV of 57.2%. The barley used for both beer and whisky is grown on Tom’s own fields, with milling, mashing and fermentation taking place at the brewery 4 and a half miles away from the distillery itself – if the distillery was in Scotland, this would not be allowed due to Scotch Whisky Association regulations. In planning the distillery, Tom and David enlisted the help of legendary distillery consultant Jim Swan, who was well known around the world for assisting new distilleries such as Kavalan, Kilchoman, Penderyn and Lindores Abbey, before his untimely death in 2017. The house style will ultimately be akin to the likes of Glenlivet – fruit forward but somewhat delicate in body. The Master Distiller is a young man named Joe Clark. Joe’s first job in the whisky industry was as a part-timer in the York branch of The Whisky Shop – at that time managed by none other than yours truly. His passion and enthusiasm was obvious from the very start, and he has worked tirelessly to ensure the early spirit releases from the distillery – under the brand name of ‘Filey Bay’ – are of the highest quality. In addition to two copper pot stills, a directional arm can connect to a four plate column still, which enables them to play around with reflux and redistillation. Maturation takes place principally in first-fill ex-Bourbon casks from Old Forester, although plenty of experimentation has been done with other cask types and finishing. Indeed, the current core range features a finish using Moscatel Wine casks and an STR ex-Rioja cask finish – STR (or shaved, toasted and recharred) is a signature of Jim Swan’s legacy. Filey Bay Flagship, however, can be seen as the key introduction to the Filey Bay flavour profile, with light, fruity and creamy notes throughout. Unlike other recent new whisky distilleries across the UK, Spirit of Yorkshire never had any intention to delve into the massive gin or growing rum market, which would have giving them an early and potentially lucrative revenue stream. The only concession they have made was the release of a Whisky and Malt Spirit Cream Liqueur at the end of 2020, allowing visitors to their distillery who didn’t drink whisky the chance to still appreciate their output. Just like the IPA Finish release, Filey Bay Porter Cask has a somewhat convoluted process to get to bottle that exemplifies the close connection between the distillery and its sister brewery. Barrels of Filey Bay whiskies from both ex-Bourbon and ex-Pedro Ximenez Sherry (that would be bottled Sherry Cask Reserve #2) were filled with Wold Top Marmalade Porter, which then rested for 14 months to add an additional influence to the wood. Entering the cask at 5%, the Porter was disgorged from those barrels at a higher ABV of 8.5% to be bottled under the name Rip Curl. The casks were refilled with full-term ex-Bourbon matured whisky that had originally been distilled in 2018 and returned to the warehouse for about 9 months, eventually bottled as a limited edition release of only 2000 bottles at an ABV of 50% MUSIC: ‘Kick The Can’ by The Mini Vandals – Free Licence

It was founded in 2019 but was the result of a previous 8 years of separate research and development by three separate families – the Hamiltons, Arundels and Mordues - to create a new spirit brand. Combining skills and experience, the team first launched a vodka made with King Edward potatoes grown at the Hamilton family farm. It was branded Edwards 1902, named after the year of both King Edward 7th coronation and when the King Edward potato – named in his honour - was first grown in Louth, just 30 miles away from the distillery location. Known for their creamy texture, the potatoes produced a rich, thick mouthfeel for the vodka, which was then used as the base of a Yorkshire Rhubarb vodka and coffee and elderflower liqueurs. But there was also the desire to produce a single malt whisky, so Laureate barley was sourced from Yorkshire and distilled in Bertie, the still named after King Edward 7ths nickname. Maturation took place initially in small ex-Bourbon casks before a period of finishing in barrels that previously held Pedro Ximenez Sherry. The Flarepath is the name of the industrial estate where the distillery sits and is so named as it was previously part of an RAF airbase that was operational during World Wars 1 and 2. As a result the first whisky release from Elsham Wold pays homage to the role of the Lancaster aircraft during World War 2 and the airmen who flew in them. There were only 150 bottles of Elsham Wold Flarepath PX Sherry Cask Finish produced, with no colour added or chill filtration taking place, and it was released at an ABV of 47.1% MUSIC: ‘Kick The Can’ by The Mini Vandals – Free Licence

Bakewell, an Anglo-American musicologist, cares deeply about the island and the venture aims to not only provide long term employment opportunities but also provide a focal point for the local population to rally around – it has often been dubbed a ‘social distillery’ with spirit made for the community, by the community. Simon Erlanger, who had previously worked with Diageo and Glenmorangie, was brought on board as Managing Director to lead the operation. ‘Hearach’ translates from Scottish Gaelic as ‘a Harris islander’ and is the first Single Malt whisky release from the distillery. 100% Scottish barley is used and 8 batches have been released in quantities of around 13,000 bottles each, with the marriage of casks being overseen by chief blender and Hearach Shona MacLeod, who herself is mentored by Dr Gordon Steele, well-known within the industry for his expertise on flavour profiling. The whisky is a minimum of 4 years old and maturation takes place in a combination of first-fill ex-Bourbon casks sourced from Buffalo Trace and Heaven Hill alongside ex-Oloroso and ex-Fino Sherry barrels. A small amount of peated barley is also used to introduce a slightly smoky element, with a phenol level of around 12 to 15 PPM. On the very same day the beer was disgorged from the casks, whisky aged around five to five-and-a-half years old in the case of this 2nd batch - that otherwise would have become Flagship Single Malt – was refilled into them and left for around 6 months to marry the influence of the ale in the wood. The Canadian whisky industry is one of the least regulated, which doesn't help matters in terms of that reputation, but it does also allow producers to really play around with production methods. A mashbill of 99.5% corn and 0.5% is aged for 7 years in American oak ex-Bourbon casks at an undeclared distillery in the province of Ontario - which based on locations of existing distilleries in Canada is more likely based in Toronto - before being given to Andres Faustinelli, master blender for Bearface. He uses this base whisky as a blank canvas to work with, transferring it into French oak barrels that previously held Cabernet Sauvignon, Merlot and Cabernet Franc wines at the Mission Hill Winery in British Columbia. But instead of bringing the wine casks to him, the whisky itself travels nearly 4000 kilometres to Mission Hill to be transferred into those barrels and rest in the winery cellars. For a final flourish, the spirit then undergoes what has been trademarked as ‘Elemental Aging’. Casks made from Hungarian oak, known to provide a spicy influence to spirit, are filled with the whisky and spend time in shipping containers in the middle of British Columbia forests. The extreme temperature fluctuations of the region – with bitterly cold nights and hot days – combined with the metal containers create increased agitation and interaction between whisky and wood. This Triple Oak maturation process aims to create three distinct flavours within the whisky – soft vanilla from ex-Bourbon American oak, red berry notes from the French oak wine barrels, and a spicy finish from the virgin Hungarian oak. To top it all off, the whisky is then presented in a distinctive bottle that looks like it has been slashed by a big ol’ grumpy bear. Dias, a winery and cooperage 15 miles South of Porto. There are only 1321 bottles of Wire Works Double Oak Port available at an ABV of 52.2%, with no colouring added or chill-filtration taking place. The first smoky expression of Lochlea whisky, maturation of the spirit took place in ex-Islay barrels and peated quarter casks to provide a soft, warming smokiness that will warm the cockles after a hard days work in the cold. Peat isn't used the dry the barley for Lochlea spirit, so this was the only way John Campbell could introduce some kind of smoky representation in the distillery portfolio. There are 11,000 bottles of Lochlea Ploughing Edition available worldwide, no colouring is added and no chill-filtartion takes place, and it is bottled at 46% ABV. The First Crop Sowing Edition is 100% matured in 1st fill Bourbon barrels, and is bottled at a slightly higher ABV than the First Release at 48% as opposed to 46. As before, there is no chill filtration or colour added. The inaugural First Release was a combination of 1st fill Bourbon and Pedro Ximenez Sherry casks, which gave a slightly fruity character to a light citrus-and-hay flavour profile. Without the PX element on this release, there is more citrus going on, with a subtle biscuit note in the background. It's VERY Spring-like, and so does a grand job of evoking what it is trying to! A combination of spirit matured in first-fill ex-Bourbon barrels (probably from Maker’s Mark), Oloroso sherry casks and shaved, toasted and recharred red wine barriques, there is no specified numbers of bottles in the initial batch - however depsite increasing the volume of the batch produced due to high demand retailers are still being allocated stock as opposed to ordering freely. No age-statement is provided, but it could be assumed the average age is around three and a half years old. There's a nuttiness on the nose initially but the palate is surprisingly sweet and full, with distinct notes of cream soda and Eton Mess, particularly red fruit. It's a light and delicate dram that still retains a full character, showing that the team at the distillery are producing an excellent spirit from day one! Follow The Spirit Specialist on social media: Facebook: https://www.facebook.com/specialistspirit Twitter: @spiritspec Instagram: @thespiritspecialist The Lochlea Distillery (pronounced 'Lock-lee) is a conversion of the farm buildings at Lochlea Farm, situated 8 miles South of Kilmarnock, and at which the world famous Scottish writer and poet Robert Burns lived and worked from 1777 to 1784. Plans for a distillery by the current owner Neil McGeoch were approved in 2014 and whisky production commenced in August 2018. Malcolm Rennie, who had previously been distillery manager at the likes of Bruichladdich, Ardbeg, Kilchoman and Annandale, initially worked with Neil as a consultant before coming on board full-time to oversee the birth of the whisky – however he then left to join the rebirth of the Rosebank Distillery in October 2021, and was replaced by John Campbell, who had previously been the distillery manager at Laphroaig for 16 years. The distillery is another new whisky venture who are producing a grain-to-glass spirit – they grown their own barley in fields literally over the road, and have their own water source. The bottle itself features embossing referencing the tyre tracks that surround the farm. The team have experimented with various cask types during production, and the First Release is a combination of spirit matured in ex-Bourbon (with all signs pointing to Maker’s Mark) and ex-Pedro Ximenez Sherry casks. Whereas the previous two editions were Orange & Gingerbread flavour, this year sees a change to Spiced Orange and Cranberry (in an arguably nicer box, too). As a result, the soft, sweet spicy notes present before are much more subdued, with more of a tangy red berry note coming through instead. It's not sickly sweet at all, which some gin liqueurs can easily be, with a fresh, light mouthfeel. It drinks well on it's own but add a good glug to a glass of Champagne for a decadent festive treat!
