Corned Beef | Kamado Joe

Ingredients:
-Corned Beef Brisket or Round
-Mustard
-Favorite Bbq Rub
-Onions, Garlic, Carrots, Potatoes, and Cabbage
-Coriander Seed, Mustard Seed, and Peppercorns
-Beef Broth
-Salt &Pepper

Instructions:
-Soak corned beef in ice water for 2 hours before seasoning.
-Pat dry and season with mustard and BBQ spices (ideally overnight).
-Set up Kamado Joe for 250F indirect heat and smoke for 2-3 hours until internal temp reaches 165F.
-Sauté onions and garlic in butter or olive oil in a preheated Dutch oven.
-Add carrots, potatoes, salt, and pepper.
-Once corned beef reaches 165F, move Dutch oven to Kamado Joe, add cabbage, beef broth, coriander seed, mustard seed, and peppercorns. Stir and cover.
-Increase temp to 325F and cook until internal temp reaches 200-203F (about 2 hours).
-Let it rest for at least 30 minutes, then slice thin. Enjoy!
