··· ··· ··· ··· Ingredients: -Corned Beef Brisket or Round -Mustard -Favorite Bbq Rub -Onions, Garlic, Carrots, Potatoes, and Cabbage -Coriander Seed, Mustard Seed, and Peppercorns -Beef Broth -Salt &Pepper Instructions: -Soak corned beef in ice water for 2 hours before seasoning. -Pat dry and season with mustard and BBQ spices (ideally overnight). -Set up Kamado Joe for 250F indirect heat and smoke for 2-3 hours until internal temp reaches 165F. -Sauté onions and garlic in butter or olive oil in a preheated Dutch oven. -Add carrots, potatoes, salt, and pepper. -Once corned beef reaches 165F, move Dutch oven to Kamado Joe, add cabbage, beef broth, coriander seed, mustard seed, and peppercorns. Stir and cover. -Increase temp to 325F and cook until internal temp reaches 200-203F (about 2 hours). -Let it rest for at least 30 minutes, then slice thin. "I am a firm believer that grilled cheese sandwiches should be made on the grill!" - Chef Eric Gephart Bacon Grilled Cheese Ingredients: 4 Slices Bacon, Cheshire Pork 2 Tablespoons Butter, Unsalted 4 Slices Sour Dough Bread 1 Cup Shredded Mozzarella 1 Cup Mexican 4 blend Cheese 2 teaspoons Lanes BBQ SPG (Salt, Pepper, Garlic) Method: 1. Stabilize your grill at 400F. Install a cast iron griddle over the open flame and place a half moon deflector shield on the other half and top with a grill grate, creating 2 zone cooking. 2. Before the cast iron griddle gets hot, place the bacon on the surface and allow the bacon to cook utilizing the gradual rising heat as the grill comes to temperature. Wipe some of the grease off the surface then add a knob of butter to the remaining grease. Place the sour dough on the cast iron griddle top in the melted butter. Allow the bread to toast for 2 to 3 minutes then melt a bit more butter and flip. 3. As soon as you flip the bread top each slice with ½ cup of mixed cheese and season the shredded cheese with SPG. Place 2 slices of bacon on top 2 slices of bread. These will be your bottom halves. Close the dome and allow the cheese to melt. 4. Transfer the toasted bread with melted cheese to the indirect side and allow the cheese to melt a bit more, then top the sandwiches and transfer to a cutting board. Slightly press the sandwich and slice in half. Plate and enjoy! Please Enjoy!" - Chef Eric Gephart Pineapple Chipotle Chicken Wings Ingredients: 2 Dozen Chicken Wings, Springer Mountain Farm 1 Tablespoon Lanes BBQ SPG ½ Cup Lanes Pineapple Chipotle Sauce Method: 1. Stabilize your grill around 400 - 600F and use 2 deflector shields the set up for an indirect cook. (This is an indirect “Roast”) 2. While your grill is coming to temperature, separate your wings into drumettes and flats if applicable. Next, scruff the wings (run the knife across the surface to create more nooks and crannies. Season the wings with SPG, then place the wings on the grill. 3. Cook lid down for 25 -30 minutes then flip the wings. Be sure they do not stick. Cook for another 20 minutes lid down. Stack the smaller wings that come temp faster than the larger ones in the center and treat them as a larger roast to keep more moisture inside and allow all wings to come off hot at the same time. Cook all wings until they come to an internal temp of 175F. 4. Transfer the wings to a bowl and dress the wings with the Pineapple Chipotle Sauce. Return to the grill and allow the sauce to tack up lid down for 1 minute. Transfer to the presentation plate and enjoy!!! Slightly oil your grill grate and begin to cook and render your sausage. Once the sausage is cooked, rub some fresh herbs in the fat on the cooking surface. Remove the herbs and toast the naan bread in the herb seasoned sausage fat. Once it is toasted, spread the pizza sauce over the top. Next add cooked and crumbled sausage then top with shredded cheese and return to the grill to crisp the bread and melt the cheese. (Dome Down roughly 2 minutes) 3. Remove from the grill and top with some more Sausage and sliced Basil. Season with SPG, cut into slices and enjoy! Please Enjoy!" - Chef Eric Gephart Grilled Asparagus with Charred Lemon Butter Sauce Ingredients: 1 Bunch Asparagus, Pencil Thickness, Thick Ends Trimmed 1 1/2 Cups Dry white wine 1 each Lemon, Sliced in Half 1 Each Bay Leaf 6 Each Black pepper Corns (Optional ½ Minced Shallot) 3 Tablespoons Heavy Cream ¾ Pound Butter, Unsalted (room temperature) Salt To taste 1 teaspoon Fresh Cracked Black Pepper Method: 1. Stabilize your grill at 450+F. Bank the charcoal under 1 side and lower the grill grate the lowest setting of the divide and conquer system. Add the Peppercorns and bay leaves. Slice your lemon in half and place the flesh side on the grill while the liquid is reducing. Once the lemon is nicely charred, squeeze half into the reduction mixture. Simmer and reduce until liquid is reduced by about 75%. 2. Add the Heavy Cream (not traditional I know but I love it for texture, flavor, and stability) allow to reduce for 2 more minutes until you have a nice sheen on the bubbles from the reduced cream. 3. Take the pan off the heat and whisk in room temp. butter a little at a time. Keep butter moving until it melts. When melted, add a few more cubes, whisking continuously so butter emulsifies into the wine/lemon juice reduction. 4. Continue to add butter, a little at a time until all of it has been incorporated and the sauce has a thick, nape texture, 2 to 3 minutes. Season with salt. Strain if you like. 5. Place the asparagus on the grill and char for 1 to 2 minutes until slightly charred slightly softened, season with salt. Transfer asparagus to the presentation plate and top with sauce, season with black pepper. Please Enjoy! Here it is!" - Chef Eric Gephart BBQ Bread Ingredients: 12 oz Large soft baguette, hand tare into baseball size pieces ¼ Cup Olive oil 2 teaspoons Salt Dipping Sauce 2 oz Lime Juice 3 T Chili slinger Chipotle BBQ Sauce 1 T Kozlik’s Triple Crunch Mustard 1 t Garlic, Minced 4 T Cilantro ¼ t Black Pepper ¼ t salt ½ C Olive oil Sauce Method: Mix well and reserve in a bowl for dipping. Method: 1. Stabilize your grill at 350-375F. Using 1 deflector shield, set up your divide and conquer system with one direct side for charring bread and an indirect side for baking. 2. Dip the bread in the olive oil/salt mixture (let it soak up the mixture but do not let it become dripping wet as you will have flare ups) 3. Toast the bread off on the direct side then graduate it to the indirect side to finish warming through. Close the dome and slow the oxegen flow, locking in the flavor of the natural lump charcoal. While the bread is baking, make your dipping sauce. 4. 3 minutes later, transfer bread to a linen lined basket or cutting board and serve with the dipping sauce. Please Enjoy! Smoked Spinach Artichoke Dip Ingredients: 8 ounces frozen chopped spinach, thawed 1 12 ounce bag frozen artichoke hearts 1/2 cup 2 tablespoons freshly grated Parmesan 1/2 cup grated smoked gouda 3 cloves garlic, minced 1/2 teaspoon red pepper flakes 1/2 cup mayonnaise 1/2 cup sour cream 4 ounces cream cheese Method: 1. Load your grill half full with lump charcoal. 2. Press the AFS button. The element is ON when the red light is glowing. 3. Leave the dome open for 10 minutes with the bottom vent fully open. 4. Add your wood chunk once the charcoal is ignited. 5. Place the heat deflector and grates on the grill. 6. Place the empty cast iron pan on the grill to come to temperature. 7. Close the dome. 8. Begin closing the top vent when the dome temperature is within 50°F of your target (350°F). 9. Mix all ingredients into a bowl. 10. Once your grill reaches temperature (350°F), transfer the mixture to the cast iron. Spread the mixture in the cast iron until it is even in the pain. 11. Sprinkle 2 tablespoons of Parmesan cheese on top. 12. Allow to cook for 30 minutes, stirring every 10 minutes until you achieve a golden brown, crusted, and bubbling dip. 13.
