Vegan cake made of chocolate and cookies - Vegan recipe
Hello,
Today I would like to show you a brand-new vegan chocolate and cookie cake recipe.
Ingredients :
- 1 vegan chocolate bar (200g, dark chocolate is usually vegan, I use Baker's Chocolate personally)
- 1 box of vegan cookies or biscuits of your choice (I used 4x12 cookies)
- 125 g of vegan butter
- 60 g of sugar
- 60 ml of non-dairy milk (mine's soy)
- 2 coffees
- 1,5 tbsp of cornstarch
- 5,5 tbsp of water
Instructions :
- Dice your chocolate before heating it up on low heat, add 2 tbsp of water
- Add your milk a little bit at a time and remember to stir
- Pour your vegan butter
- In a bowl, add the rest of your water with your cornstarch
- Add this to the chocolate
- Stir it well before adding your sugar
- Stir again
- Dip your cookies into your coffee and place them in an oven safe dish
- Feel free to add extra bits of cookies to fill any gap you might see
- Pour one thin layer of chocolate on top
- Then add more cookies then chocolate, until you're left with two biscuits only
- Finish by adding one last layer of chocolate
- Add the remaining cookies to the center of your cake
- Refridgerate until the chocolate has settled
