Neil Harmon's "Jig in A minor" was written to commemorate the retirement of Dr. John Longhurst, who served as an organist for the Mormon Tabernacle Choir for 30 years. This piece was known as "Fantasy on the name Longhurst" before it was published in 2010. I've found this piece to be very versatile and particularly enjoy it's medieval quality.
