Pasta alla Norma is a classic Italian pasta dish that originates from Sicily. It typically features pasta, often rigatoni or penne, tossed in a sauce made with tomatoes, eggplant (aubergine), garlic, basil, and olive oil, then topped with ricotta salata cheese.
The name "alla Norma" is believed to have originated from the opera "Norma" by Vincenzo Bellini, which was very popular in Sicily. The dish is said to have been named in honor of the opera, either because the colorful mix of ingredients resembled the robes worn by the characters or because it was the favorite dish of a Sicilian playwright who exclaimed "Chista è 'na vera Norma!" 500g fresh tomatoes
200-300g tomato sauce
2 cloves garlic
1 small onion
fresh basil
salt & pepper
ricotta salata cheese, salted ricotta
