One Pot Meal
Lentil Veggie-olonese

Ingredients
• Small onion
• Clove of garlic
• Tbsp or so of olive oil
• Tbsp bouillon powder/stock cube
• Sprinkling of ‘pizza’ herbs
• 2 bay leaves
• Salt and pepper
• Tin of tomatoes
• Tin of cooked green lentils
• Dash of Worcestershire sauce*

Method
1. Finely dice the onion.
2. Crush the garlic.
3. Heat the oil in a large frying pan and add the onion and garlic, stirring regularly.
4. Add the stock powder, herbs and bay leaves, and any other seasoning and simmer until the onion becomes translucent.
5. Add the tin of tomatoes and stir.
6. Pour in the tin of lentils including the water and stir.
7. Add the dash of Worcestershire Sauce.
8. Simmer whilst you cook the spaghetti and grate the cheese.

This is such a quick and easy dish to make and can be bulked up even more by adding linseed (flaxseed) or other seeds and pulses.
