Ingredients:

1 cup split yellow moong dal (mung beans)
4 cups water
1 medium-sized onion, finely chopped
2 medium-sized tomatoes, chopped
2-3 garlic cloves, minced
1-inch piece of ginger, grated
1 green chili, chopped (adjust to your spice preference)
1/2 teaspoon turmeric powder
1/2 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1/2 teaspoon garam masala (optional)
1/2 teaspoon red chili powder (optional, for extra spice)
Salt to taste
2 tablespoons oil or ghee (clarified butter)
Fresh coriander leaves, chopped, for garnish
Lemon wedges, for serving
Instructions:

Rinse the moong dal thoroughly in cold water until the water runs clear. Soak the dal in water for about 30 minutes. Drain the water after soaking.

In a pressure cooker or a large pot, add the soaked and drained moong dal along with 4 cups of water, turmeric powder, and salt. If using a pressure cooker, cook for about 3-4 whistles. If using a pot, cover and cook on medium heat until the dal becomes soft and mushy, usually about 20-25 minutes. If the water reduces too much during cooking, you can add more water to achieve your desired consistency.

In a separate pan, heat the oil or ghee over medium heat. Add cumin seeds and mustard seeds. Let them splutter.

Add the finely chopped onions to the pan and sauté until they turn translucent.

Add minced garlic, grated ginger, and chopped green chili to the pan. Cook for another minute until the raw smell disappears.

Add chopped tomatoes to the pan and cook until they become soft and mushy.

If you want the dal to be spicier, you can add red chili powder at this stage.

Once the dal is cooked, mash it lightly with the back of a spoon to make it creamier. You can adjust the consistency of the dal by adding more water if needed.

Add the cooked dal to the pan with the onion-tomato mixture. Stir well and let it simmer for a few minutes so that the flavors blend together.

If you prefer, sprinkle garam masala over the dal for added flavor (optional).

Check for salt and adjust seasoning according to your taste.

Garnish with chopped fresh coriander leaves.

Your Moong Dal is now ready to be served. Serve it hot with rice or Indian bread (roti/naan) and some lemon wedges on the side. Enjoy your delicious and nutritious Moong Dal!
