Join us as we hunt for sustainable seafood! In this episode we meet with Italian Chef, Mattia Danese and he brings his culture to the Miami seafood scene. Chef Mattia has been cooking fish since he was 14, but some of his newer techniques, like utilizing all parts of the fish, are relatively new. Not only does Mattia prepare the heart and liver of a fish for us, he shows us a recipe that uses the milt (sperm) of the fish. This recipe has been passed down for generations. In addition to working to use every part of the fish, Chef Mattia loves cooking with underutilized species. He prepares ballyhoo three different ways - raw, torched, and fried and scrapes the carcass of a yellow jack to make a delicious yellow jack tartare.
