Smoked pork butt:
Place your pork butts in a foil pan and season with your favorite seasonings. Set uncovered in smoker and smoke at 225°F for 4 hours or until the pork reaches 150° in the middle. Remove pan from grill and tent with aluminum foil for another 4 hours or until the center reaches 195°. Then remove pan of meat and wrap with towels with pork still in the pan. Place in an ice chest for two hours. Then your pork butt is ready to pull. Great over fries, nachos, or as a sandwich.
Potato Wedges:
1/2 c. butter
1/4 c. flour
1/4 c. Parmesan cheese
1 tbsp. paprika
3/4 tsp. salt
1/8 tsp. pepper
pinch of garlic salt and/or onion salt
6 med. potatoes, cut in very thin wedges, skins on
Melt butter in a 9x13 glass baking dish. Combine next 6 ingredients in large plastic bag. Rinse potatoes and drain well. Place potatoes in bag and shake well. Place a single layer in the baking pan. Bake uncovered, at 350° for 1 1/2 hours. If you want sprinkle with more cheese and bacon bits in the list 10 minutes before serving!!

Grilled Stuffed Mushrooms
Have fun with this one. We just used what we had and tried it out! A good cream cheese, salty meat rub, bacon, garlic, and herbs, will always be a winning combination! We smoke them on medium heat for about half an hour or until the mushrooms reach the desired texture.
Dirty Coke:
Fill a cup half full with ice. Fill 90% of the way with Coke. Add a splash of heavy whipping cream, a tablespoon of homemade coconut syrup, a squeeze of lime juice. Top with more lime slices for garnish.
I make my coconut simple syrup by heating a cup of water until it's hot enough to dissolve a cup if sugar. Then I add 1/2 tbsp. Of coconut extract.
