When I found this Discovery Series product on the shelf, I had to buy it with my Father's Day funds. Thanks, family, for helping me obtain this particular bottle. Gordon & MacPhail sourced the single malt Scotch whisky from Glenrothes and then carefully matured it in their Sherry casks. Like most things I have sampled from Gordon & MacPhail this is a good scotch. Meaning it takes a moment to process, it isn't simple, and it has that flavor profile that screams I'm a Scotch. Inniskillin has always been one of the most consistent producers, so I was excited when I saw that the Walsh Distillery in Ireland had matured some of their triple-distilled Writers Tears in Ice Wine casks from Inniskillin. Writers Tears is everything you would expect from an Irish whiskey. The Ice Wine Cask edition is darker in color and sweeter in flavor. You get the ice wine flavors from the whiskey, which means it will not be for everyone. Much like an ice wine is defined as a dessert wine because of it's sweetness, I would also call this limited edition a dessert whiskey.

And, boy, did I get lucky and make a good choice recommending this to Jay. We both loved this bottle of Scotch, it was excellent, and we picked up all the notes before reading them off the bottle, which never happens. Sorry about the audio. The mic wasn't plugged all the way into the camera. Carefully matured in their own casks with spirit entrusted to us from Dalmore Distillery. Filled in 2008, aged 13 years, by Gordon & Macphail. Cask Strength: 56.2% ABV Non-chill filtered and no added color. Notes: Vibrant vanilla and honeysuckle aromas lead to notes of lemon cheesecake, and rich honey flavors complement orange oil with hints of peppermint. A medium-bodied finish with soft grapefruit and mature oak.

Orchard fruits intertwined with nutty caramel, nougat, and powerful butterscotch overtones. On the palate, the initial sweetness from the malt gives way to light citrus fruits, oranges, lemon, green apples, pepper, and clove. The wood spice and lovely oak tannins firm up this whiskey before the oloroso sherry casks take the final curtain. And the finish has orchard fruits and caramels that give way as subtle notes of walnut, nougat, vanilla, and dried fruits come through in the soft lingering finish.
