* 4 ounces super firm tofu
* 2 tablespoons tomato sauce
* 1 tablespoon olive oil
* 1 teaspoon liquid smoke
* 1 cup vital wheat gluten
* 1 teaspoon fennel seeds
* 1 teaspoon paprika
* 1 teaspoon red pepper flakes
* 1/2 teaspoon to 1 teaspoon of salt *depending on saltiness preference
* 1/4 teaspoon onion powder
* 1/4 teaspoon garlic powder
* 1/8 teaspoon black pepper
INSTRUCTIONS
* In a food processor pulse the tofu, tomato sauce, olive oil, and liquid smoke. Pulse for 30 to 45 seconds until
* Then add in the vital wheat gluten and seasonings. Continue to pulse until a crumbly mixture forms.
* Pour in ¼ cup (60ml) of water and pulse one final time to turn it into more a sticky mixture.
* Use clean hands to knead together for 1 to 3 minutes. Just until it comes together and forms into a ball. Divide into 2 pieces. Roll out into a 5 to 7 inch log shape.
* Use a piece of parchment paper to roll up the vegan seitan pepperoni tightly and then wrap it tightly in foil. Twist the ends of the foil to make it like a party popper or piece of candy. If you need a visual please check the youtube video.
* Steam in a steamer basket for 30 minutes. Then let them cool for 20 minutes before unwrapping.
* After you unwrap you can then thinly slice or wait to slice until ready to use./media:description>

* 4 ounces super firm tofu
* 2 tablespoons tomato sauce
* 1 tablespoon olive oil
* 1 teaspoon liquid smoke
* 1 cup vital wheat gluten
* 1 teaspoon fennel seeds
* 1 teaspoon paprika
* 1 teaspoon red pepper flakes
* 1/2 teaspoon to 1 teaspoon of salt *depending on saltiness preference
* 1/4 teaspoon onion powder
* 1/4 teaspoon garlic powder
* 1/8 teaspoon black pepper
INSTRUCTIONS
* In a food processor pulse the tofu, tomato sauce, olive oil, and liquid smoke. Pulse for 30 to 45 seconds until
* Then add in the vital wheat gluten and seasonings. Continue to pulse until a crumbly mixture forms.
* Pour in ¼ cup (60ml) of water and pulse one final time to turn it into more a sticky mixture.
* Use clean hands to knead together for 1 to 3 minutes. Just until it comes together and forms into a ball. Divide into 2 pieces. Roll out into a 5 to 7 inch log shape.
* Use a piece of parchment paper to roll up the vegan seitan pepperoni tightly and then wrap it tightly in foil. Twist the ends of the foil to make it like a party popper or piece of candy. If you need a visual please check the youtube video.
* Steam in a steamer basket for 30 minutes. Then let them cool for 20 minutes before unwrapping.
* After you unwrap you can then thinly slice or wait to slice until ready to use.

INGREDIENTS
Juice
1 ½ cups (360ml) mango passion fruit juice
½ lemon, juiced
1 teaspoon ginger
1 can seltzer, grapefruit flavored
Garnish
Lemon slices
Fresh thyme
INSTRUCTIONS
In a large measuring cup add the mango passion fruit juice, lemon juice, and ginger. Mix together until well incorporated.
In the serving glass add ice cubes and a few pieces of thinly sliced lemon. Pour the juice in until it reaches about halfway. Then top the rest of the drink with the grapefruit seltzer.
Garnish with a few pieces of thyme, I even used some dried lavender.

Makes 2
- 2 tortillas
- 1/3 cup trader joes meatless ground (Or any vegan ground beef substitute)
- 1/8 onion, chopped
- 1 tablespoon olive oil, divided
- 1 tablespoon soy sauce
- Seasonings: black pepper, garlic powder, onion powder
- 1/2 cup vegan cheese
- 2 teaspoons minced dried onions
- Pickles, for topping
- Lettuce, chopped, for topping
Special Sauce
- ¼ cup vegan mayo
- 1 tbsp sweet dill or dill relish
- 1 tsp maple syrup
- 1 tsp onion powder
- 1 tsp apple cider vinegar
- 2 tbsp ketchup
- ⅛ tsp salt
1. Rehydrate the TJs meatless ground in 1/3 cup of water.
2. In a pan add 1/3 of the oil and add the onions. Sauté till translucent. Then add in the meatless ground, soy sauce, and seasonings. Cook for 5 to 8 mins over medium low heat until all liquid absorbed.
3. Rehydrate the minced onions with 1/2 teaspoon of water. This is apparently what McDonalds does.
4. Add a quarter of the vegan cheese to one half of a tortilla. Then add half of the meat substitute, half of the minced onions, and and another quarter of vegan cheese. Repeat with the second tortilla.
5. Add the remaining oil to a pan and pan fry each quesadilla for a few mins on either side over medium heat until golden and crispy.
6. Prepare the special sauce by mixing all ingredients in a bowl.
7. Top the quesadillas with the lettuce and pickles. Drizzle special sauce. Cut and enjoy.
