If you're starting out with a whole brisket in the package, drain and pat down to remove fluids. Begin by trimming off about 60& of the back end of the brisket, as demonstrated. From the Triangle section of fat, make a cut to remove. Season with a generous amount of salt, followed by water to make the seasoning stick, don't forget to season under every flap. Recommended time for allowing seasoning to sink into the meat is 12 hours.
Maintaining proper heat throughout the cooking process is extremely important. Place charcoal in a small pile off to one side and drench with lighter fluid. When it burns down, cover with hickory chips. When it starts to smoke replace the grate and place water trays on the bottom shelf of the grill, add beer to them.
