Cooking With Thatown2 Good Morning Towners, today my wife got down and made this delicious super simple breakfast. Roasted Cauliflower Breakfast Scramble with Bacon and Eggs in the air fryer. Towners, yall definitely have to try this one out.
Ingredients
12 oz frozen cauliflower
4-6 strips of bacon
4 eggs
1/8 cup shredded cheese
1 tbsp Cooking With Thatown2 Lemon Garlic Seasoning
optional
jalapenos
sour cream
salsa
tomatoes
Add your bacon to a skillet and cook for 2-3 mins per side. While the bacon is cooking add the frozen cauliflower to the air fryer and spray with cooking spray. Cook at 400 degrees for 10-12 minutes. Once the cauliflower has defrosted around the halfway point season the cauliflower with the Cooking With Thatown2 Lemon Garlic Seasoning. After the cauliflower finishes cooking top it with cheese and cook for 30 seconds to 1 minute just enough for the cheese to melt. After the bacon finishes cooking remove them from the skillet, let them cool and then crumble it into small bite-size pieces. Reserve some of the bacon grease and use that to scramble your eggs. If you do not like cooking in bacon fat feel free to use butter or oil. Cook the eggs over medium heat with salt and pepper to your desired level of doneness. Once the eggs are finished cooking then you're finished. The next step is to layer all ingredients together and enjoy.
