IF you're looking to reduce acidity levels further than what has been featured here, you can reduce the amount of onions and garlic added, as well as add more sugar. If you're trying to avoid sugar though, you can opt to use baking soda which will alternatively lower the acidity factors. Also perhaps hold off on adding any wine. Experimentation is strongly encouraged, however in doing so - taste may be sacrificed. It is advisable to use the type and amount of ingredients as featured by Chef Steve if you're trying to directly replicate the entree featured in this video.
